Cilantro Lime Rice
Ingredients
1 cup Long Grain Rice, uncooked.
1/2 medium Yellow Onion, peeled and diced.
1 clove Garlic, chopped fine or grated.
1 large bunch Cilantro, washed, dried and tops chopped fine.
2 Tbs Olive Oil
Juice and zest of 1 Lime
Salt to taste
Instructions
Cook rice according to package directions or in a rice cooker. (You can cook rice in chicken broth for a different flavor)
In a skillet, heat olive oil over medium heat and add chopped onion. Cook until onion starts to become transparent and add garlic. Cook one minute and turn off heat.
Put cooked rice into a large bowl and add all the other ingredients and stir well. Add salt to taste.
This recipe can easily be doubled.
