Table d'hôte Tuesday

Table d'hôte Tuesday's will be my weekly recipe day...

It is French for "Host's table".




Chicken and Wild Rice Soup

Ingredients

3-4 boneless skinless chicken thighs, cut into bite size pieces
2 Tbs Olive oil
1 medium onion, peeled and diced
2 cloves garlic, chopped or grated
2 Medium carrots, diced
1 Tbs Italian Seasoning
1 quart chicken stock
2 cups water
1 cup wild rice (I used a wild rice medley from Trader Joe's)
1 cup half and half
2 Tbs Butter
Salt and Pepper to taste


Instructions


Saute onions and carrots in medium saucepan over medium high heat until onions and carrots are slightly soft, about 3 minutes. Add chicken and stir. Cook stirring occasionally until chicken is slightly browned and cooked through. Turn off heat.

In a large stock pot, add chicken stock and water, bring to just boiling, turn down to medium heat and add Italian seasoning, garlic, wild rice, chicken, carrots and onions. When the mixture starts to boil, turn on low, cover and simmer for 45 minutes. Go read your book... Then add butter and stir. Then heat half and half in the microwave for 1 minute and add to soup. Stir. Add Pepper to taste and salt if needed. Simmer for 10 minutes and serve with a crusty bread. Ask family to do the dishes since you are such a fabulous cook.
