Eggs Béchamel

A great breakfast for dinner treat!

Ingredients

6 tsp. butter
6 tsp. flour
1 qt. (4 c.) milk, warm
1 tsp. salt
1/2 tsp pepper
1/2 tsp nutmeg
6 thin slices of ham
1 Cup Gruyere Cheese, grated
6 eggs, cook them how ever you like them. (I did over easy for mine)
6 Slices Thick Cut Bread (I hand cut my own homemade bread but Texas Toast would work)

Prepare 

Preheat oven to 425 Degrees


Sauce~Melt butter in saucepan over medium heat. Add flour and mix vigorously with a whisk, cook for 1 minute while still whisking. Gradually add milk, mixing with the whisk to prevent lumps. Bring to a slow boil and cook for about 3 minutes. Add nutmeg, salt and pepper.

Sandwich

Cook eggs, keep warm. On a cookie sheet, place bread slices. Pour béchamel sauce over each slice. Then layer a slice of ham and some Gruyere cheese over each slice. Bake for 5 minutes or until cheese is melted. Remove and place sandwiches on individual plates and top with eggs. Serve warm.
