PW Malted Milk Chocolate Chip Cookies



Ree posted this recipe on her blog a couple of weeks ago and I just had to try them. I printed it out immediately.

I love chocolate malts...I can take or leave milkshakes but add some malted to a chocolate shake and I'm there baby!

I don't have chocolate malts very often but when I do I feel like I've found the fountain of youth. I just love the chocolaty, creamy, maltiness of it. Sometimes I will have just a malt for dinner when we're out because I get plenty filled up. Only about once a year, though.


Look at them...you know you want one...or ten.

I made these today for Fourth of July dessert. They are thin but still chewy. The flavor is a subtle malt flavor and the milk chocolate chips work well with these. I used Hershey's Milk Chocolate Chips. I ate 15 of them.

I think I will make a chocolate malt to dip the rest in.

PW Beans and Cornbread



This was super easy. Bacon and pinto beans...the best cornbread in the world...Madley puts strawberry jelly on his and I like a bit-o-honey on mine. Happy campers.

The girls really like the beans...


Straight forward nothin' fancy...just filling and hot.

We started singing "Home, home on the range...where the deer and the antelope play..."

Very tasty and we will be having this little cowboy dinner over and over.

PW Cinnamon Rolls - Father's Day

Man Bait



I've decided that I am going to make PW Cinnamon Rolls every Father's Day for Madley. 

It's just the right thing to do.

It's only 56 degrees up here where I am in the Pacific Northwest today. 

It's June 20th.

My Arizona friends are enjoying a balmy 102 degrees today.

In AZ, cinnamon rolls don't sound too good right now, do they?

You are probably making homemade ice cream.

I licked the counter where the cinnamon/sugar/butter ooozed out of the roll where I cut it up.

I am wearing my sweats.

I had to turn on my oven for the dough to rise.

Madley requested Fish Tacos for his Father's Day Dinner from a Rachael Ray recipe. They were excellent.

My house has some interesting smells going on...but the fish wasn't fishy...at all.

A little maple...a little vanilla. Oh yesssss.


The cinnamon rolls were decadent to say the least. Ree uses a maple icing which I love but no one else does. So I made it just for me and plain old vanilla for the rest of the family.

I am the Marilyn Munster of my family when it comes to some foods. I like to put a spoonful of peanut butter in my homemade fudge...my whole family hates when I do that.

I get more fudge than anyone else because I always conveniently forget to not put peanut butter in. oops.

PW Chicken Pot Pie


This was a pretty simple recipe...I don't make these very often at all... but it just sounded so good when I was flipping through the cookbook. We will be Barbecuing tomorrow so I made this for Sunday Supper today.

The "Perfect Pie Crust" is divine and as easy as any crust to make. Ree gives detailed instructions so anyone can make a good pie crust. No really. It's on her blog HERE. Try it. You may think you can't...but you can. Yes you can. Because I said so. *Don't make me get my flying monkeys!!!

What I changed in the pot pie recipe was the heavy cream used in the diced veggies and chicken mixture, I used half and half. Don't hate me Ree...I needed to save up some calories for dessert and I forgot to go work some cattle. I also used fresh thyme instead of the dried because I had some on hand.

This...was yummy for my tummy.

This recipe could easily be converted into a vegetarian dish with other veggies added... like zucchini and mushrooms and using veggie broth instead of chicken broth and would be very yummy still. Or lower fat...use canned Fat Free or Low Fat milk. Don't tell Ree.

Hmmm, now I want peach pie. I do have the other half of the crust so I think peach pie is in our very near future...like tomorrow. Yup.  
Note to self:  Tomorrow -go to store and buy vanilla ice cream to scoop onto peach pie and eat feverishly. Maybe you should also buy some peaches...and pantyhose.

OH! I almost forgot to tell you! Yesterday we were at Whole Foods and they were grilling samples and they grilled peach halves! They put them face down right on the grill! We could just eat those with ice cream! They were heavenly!!! I think this summer I will grill everything.


I love you like you were my own family...and some of you are.

Oh, and...I mailed you the jacket you forgot on your last visit. I cut the buttons off to save postage, you'll find them in the left hand pocket.

PW Homemade Pizza Crust

Pesto Tomato Pizza


I made Ree's pizza crust tonight. um...I am in love. The whole cookbook is worth this pizza crust... But you can find the crust recipe on her blog here in her favorite pizza post.

I made my own mild pesto sauce in the blender and added grated mozzarella, cheddar and monterey Jack cheeses thin sliced Roma tomatoes and grated garlic.

Madley asked me to marry him again right in the middle of a bite. "Mill oooh garry be?"



"I solemnly swear that this crust recipe will be used once a week in this house for as long as I live."

I also had yummy, ice cold Trader Joe's Natural Root Beer for him and that sealed the deal.




Lindy's Easy Peasy Mild Garlic Pesto

2 Cups fresh spinach leaves
1 Cup fresh basil leaves
1 large, peeled clove garlic, grated or chopped
1/2 cup extra virgin olive oil
1/2 tsp salt or to taste

To a blender or food processor, add garlic, spinach and basil leaves. On a low setting, drizzle the olive oil in slowly. Add salt and blend on medium high for a minute or until blended well. You can always add more olive oil if needed.

Spread over pizza crust or add to spaghetti sauce.

PW's Passover Beef Brisket- Website Recipe



For Easter I made Pioneer Woman's beef brisket and it was a hit. The recipe is on her website Here.

I must say I felt it was quite an accomplishment because my daughter asked me the next day what BBQ sauce I had used. She thought it was delicious...she is kind of picky with home cooked meals. I told her it was just ketchup and onion soup mix mixed together, marinate the meat in it over night and cook it at 275 degrees for a few hours and she was shocked!

One secret of brisket is to cut it against the grain...tender!!!!

We got the brisket at Whole Foods...it was plain, no seasonings. I made a ham too, roasted veggies, salad and scalloped potatoes to go along with it. Dessert was strawberry shortcake. YUM!

Leftovers the next day were awesome! It is a real keeper.

Salsa! and St. Patricks Day



I made Salsa from the PW website, Here...and it was a big hit. Any time I can use my food processor is a good time!

I am making our Irish meal tomorrow, Monday...so I will be making her potatoes with it. I will post my results later! Happy St. Paddy's Day!  Céad míle fáilte romhat!
