Table d'hôte Tuesday-Leftover Spaghetti Frittata
Leftover Spaghetti Frittata
6 Eggs
1/3 cup Milk
1 cup Leftover Spaghetti (with sauce and all)
Salt and Pepper to your liking
Mixed grated cheese (like Cheddar and Jack or whatever cheese you like)
Spray Oil
In a bowl, whisk eggs, milk, salt and pepper and stir in leftover spaghetti. Pour into a skillet heated and sprayed with oil, sprinkle cheese on top and cook covered over medium heat 6-8 minutes until eggs set. Serve!
*You can add Parmesan cheese, chopped fresh tomatoes and parsley on top once it's cooked or add in sauteed mushrooms and/or fresh spinach before you cook it...get creative!

Great use for leftover spaghetti. Not that I ever have any leftover spaghetti. I love spaghetti :) and it a lot.
